French Navy Beans

The French Navy Bean is a member of the legume family, offering nutrient density, mild flavor and creamy texture that performs well on its own or as a component among other ingredients.

  • Approximately 3/8 inch in length
  • White to beige with light green shading
  • Rounded, slightly kidney-shaped
  • Kosher Certified

Basic Prep

Sort carefully, then rinse thoroughly and soak overnight. Rinse and place in a large pot, covered with fresh water. Bring water to a boil for 3 minutes, reduce heat and simmer, covered, for 60 to 90 minutes, until tender. This bean produces foam when boiling, so skim the water regularly.

Suggested Uses

  • Season with garlic and thyme, savory or rosemary and serve as a side dish
  • Often used in baked beans or in soups and vegetarian stews
  • Simmer with a ham hock and winter vegetables for a hearty meal

Description

  • The French Navy Bean (Phaseolus vulgaris) is also referred to as "white pea bean" or "coco blanc." It is not related to the common navy bean, which was issued as a standard ration by the U.S. Navy during the 19th century.
  • Although they resemble the navy bean, they are smaller and more rounded, and have light celadon green shading along one side.
  • French Navy Beans boast high nutritional value, low cost and long storage life.
  • They contain high levels of protein, iron and calcium, while maintaining a low level of fats, making them a wholesome and economical addition to salads, soups and side dishes.
