Basic Prep
Heat 1 tablespoon olive oil over medium heat in a 1-quart saucepan. Add 1/2 cup minced onion, stir one minute, add rice, toast for 2 minutes with 1 tsp salt. Add 1/2 cup white wine. Heat 4 cups stock to simmer, add a bit at a time while stirring constantly until rice is just al dente. Stir in diced cold butter and Parmesan cheese to taste.

All types of risotto rice are varieties of japonica, a medium-grain subspecies of Oryza sativa.
