Basic Prep
Cook 1 cup rice blend in 4 cups simmering water for 40 to 50 minutes until rice, lentils, and split peas are cooked, but not mushy. Stir with a fork, drain off excess water.

- Green Split Peas, or "Pisum sativum," are part of the legume family. A pea is a small, round seed that grows in a pod. They are an annual, cool-season crop grown in many parts of the world. Although technically a fruit, the pea is considered a vegetable in the culinary world.
- Dried peas are part of a family of legumes collectively known as pulses, which also includes lentils and sometimes chickpeas.
- The lentil is one of the oldest cultivated legumes, mentioned throughout the Hebrew Bible, and lentils and other legumes are often paired with grains or rice to provide a complete protein.
