Carnaroli Rice

 

Carnaroli Rice is plump, medium-grain white rice, considered one of the world's most premium varieties. We source exceptional grains of this high starch rice for elegant preparations of our Carnaroli Rice.

Basic Prep

Heat 1 tablespoon olive oil over medium heat in a 1-quart saucepan. Add 1/2 cup minced onion, stir one minute, add rice, toast for 2 minutes with 1 tsp salt. Add 1/2 cup white wine. Heat 4 cups stock to simmer, add a bit at a time while stirring constantly until rice is just al dente. Stir in diced cold butter and Parmesan cheese to taste.

  • Use in seasonal risottos, adding baby greens, vegetables, tomatoes, basil, wild mushrooms and seafood
  • Use as traditional rice for an excellent entrée or side dish
  • Use in paella, sushi, pudding or salad
