Arborio White Rice

Basic Prep
Heat 4 cups stock to a simmer. Saute 2 tsp garlic, 1/2 cup onion in 1 TBSP oil for 3 minutes, add 1 cup arborio rice, cook 1 minute, add 1/2 cup white wine. Ladle in hot stock one cup at a time, stirring constantly on low heat until rice is cooked. Stir in 2 TBSP butter, 1/2 cup parmesan, and season to taste.

- Match with artichokes, asparagus, beets, crab, Parmesan cheese, peas, saffron, shallots, shellfish, truffles, veal and wine

Description
- Arborio is a Japonica cultivar of the rice variety Oryza sativa. Arborio is a plump, oval-shaped, short-grain variety of rice.
- Prized for its high starch content and ability to absorb the flavors it is paired with, Arborio is primarily used in the risotto dishes.
- Finally, restrictive trade laws were lifted in the late 1970's and early 1980's, allowing for the import of specialty foods from Italy. Today Arborio is grown domestically in several states.
